I came across this recipe on Pinterest (very evil site sucks away too much of my time) anyways it got me thinking after reading the post that went alone with the recipe. Last year about this time my mom was diagnosed with breast cancer for the second time in her life. It was a hard time in life for our family. The first time she went through it I just had to worry about my emotions and I was so occupied with just having a baby that it just does not seem like it was such a big deal. This time on the other hand it hit home pretty hard with me and I had my three kiddos to help through the emotions and pain of what grandma was going through. But a year later after chemo, mastectomy surgery and radiation she is happy and healthy again. So anyways to get on with the story every time I see pink now it just reminds me and how strong of a women my mother is and it's really okay to fight like a girl wearing pink of all things it just makes you stronger. So along with this story here is the recipe Pink Lemonade Cupcakes ooh so yummy.

Pink Lemonade CupcakesYield: 9 Cupcakes

1 c. all-purpose flour
1/2 tsp. baking powder
1/4 tsp. baking soda
Pinch salt
1/2 c. granulated sugar
1/4 c. vegetable oil
2 egg whites
1/3 c. thawed frozen Pink Lemonade Concentrate
1/4 c. buttermilk
Pink food coloring

1. Preheat oven to 350F. Line muffin pan with liners. In a small bowl, combine flour, baking powder, baking soda and salt. Set aside.
2. In a large bowl, whisk together sugar, oil, egg whites and lemonade concentrate. Alternately whisk in flour mixture and buttermilk, making three additions of flour mixture and two of buttermilk, beating until just smooth.
3. Add just enough food coloring to turn the batter a light shade of pink.
4. Scoop batter into liners (fill about three-fourths full). Bake in preheated oven for 20-25 minutes or until tops of cupcakes spring back when lightly touched. Let cool in pan on rack for 10 minutes. Remove from pan and let cool completely on rack. Top cooled cupcakes with frosting (see below).

Lemonade Butter cream:
3 c. + 3 Tbsp. confectioner’s sugar
1 stick unsalted butter at room temperature
1/8 tsp. salt
2 Tbsp. pink lemonade concentrate
Pink food coloring

1. Add the butter, confectioner’s sugar, salt, lemonade, and a few drops of food coloring to the stand mixer and mix on low using the paddle attachment until combined.
2. Turn the speed to med-high until the butter cream is fluffy and uniformly pink. Pipe or spread onto cooled cupcakes.

Mr. J's Birthday

Cranky old man....

So yesterday I had a guy call on his bill and in the process I got told I was a bad bookkeeper blah. How am I the bad bookkeeper when you did not pay 3 of your copays? Well he called back again today and yep he called me a bad bookkeeper again and told me I was not doing my job correctly. (if only i was not on the clock being paid by someone else I would have told him where the bear shits in the woods but no I do want to stay employed) My opinion is don't tell people they don't know how to do their job unless you want to do their job because if you were doing their job you would want to give it back in a heart beat. Step in my shoes for a day I dare you its not pretty. I again explained to him our billing policy and told him he had not paid 3 of his copays. He told me he was not paying for these copays like I told him you may not pay me but in the end you'll end up paying my collection agency. Leave it to a cranky old man to mess up my day.

What I've been up to lately

Well at least craft wise anyways. If you know me well enough you know if I'm not crafting I'm thinking about crafting or something to build. As some may say I eat, sleep and poop crafts hahaha I like to always have my hands busy. Here are a few things I have done lately.

When we went to California while walking the beach I picked up shells. I love shells good thing we don't live close to the beach or I would have a house full of shells. Anyways I took all of them and some sand yes I took sand too and made some pretty vases out of them just love them.

I made this black stand for my living room I made one a few years back and liked it so much that I decided I needed another.

Also made a smaller version for or bedroom. Have not had a chance to fully get it decorated yet though.

Finally made my sand-dollar frame for our beach picture. And finish up my You & Me frame. I love the way it is all coming together just need to get a few more things made for my shelf. So there you have it my crafting/building projects for the last month or so.

This is my partner in crime tonight. Although not much iffy stuff going on unless a lazy dog and being a crazy vinyl lady is a crime now a days.

Oh Mondays

Yep my Monday started out like crap. I get to work and go to log onto a website to print and EOB and the company has me linked to a different physical therapy clinic with the same name that is located in a different state. Oh nice I really did not want to call them again (Friday on was on the phone with them 3 time and I thought they had all of it fixed NOT) So I call them and they tell me it is not a problem on their end it is on the insurance companies end. When I question that because I'm still receiving the checks at the right address with the correct tax id # the lady still tells me there is nothing she can do for me and to call the insurance company. grrrr

So I call the insurance company and they reassured me that everything on their end is correct and it is the other companies problem. hmmmm go figure so she transfers me back stating I hope you can find someone that is a little smarter this time and can help you. So I'm patiently waited on hold (okay not so patiently waited) talking with my coworker telling her what the insurance company told me (hope you find someone smarter this time) silence on the other end of the phone line.....this is so and so how can I help you well it was the same lady I talked to a few minutes ago (yeah I just called you not so smart) she promptly transferred me to a supervisor with I told her who I was. Can you say oops.

Wait on hold some more.......the supervisor get on the phone and is trying to figure out what is going on and tells me it is on the insurance companies end ummmm nope just talked to them. What do you people not understand you have me linked to a company in Colorado I'm located in Idaho. He continues to search and finally states "I found the problem we set your account up wrong" you think that's what I have been trying to tell you all this time. So hopefully it will be fixed withing 24-48 hrs well at least I hope (not holding my breath). To be continued............

You know you have been married a long time when......

So this post is a little gross but what the heck. As the title says you know you have been married a long time when.......well the hubby and I were driving home having a conversations (me meanwhile blowing my nose) out of the blue opens up the Kleenex and show the hubby and ask him "when is this not going to be green anymore?" He looks at me and says "I don't know hun" and we continue on with the conversation. hmmmm would you say we are really comfortable with each other?!?!?!? Not even a yuck why are you showing me this or nothing.

By the way after 6 antibiotics yep I have been for about a month and a half and over a gallon of water up my nose I think I'm finally feeling better. I actually want to do stuff instead of just doing bare minimum. It kicked my butt this time nasty sinus crap anyways.
